Child Health Issues
This session will begin with an overview of the process for updating the Dietary Guidelines for Americans, including the roles of HHS and USDA as well as the Dietary Guidelines Advisory Committee. Current dietary recommendations around sodium consumption among children as stated in the 2010 Dietary Guidelines for Americans will be described. The session will then shift focus to the current sodium targets in the National School Lunch and School Breakfast Programs, and discuss how these targets were devised and what no-cost resources are available to personnel implementing healthier meal standards. Best practices for high levels of student satisfaction and participation in the school meals programs will also be disclosed.
Describe the role of the Scientific Report of the 2015 Dietary Guidelines Advisory Committee in the process for updating the Dietary Guidelines for Americans federal policy.
Identify at least 5 online and hard copy sodium reduction and whole grain resources available to Child Nutrition Directors and school food service staff available through USDA.
Apply best practices from schools meeting the new sodium targets to his/her own food service operations
