Results of a non-dairy industry funded research project on milk consumption will be discussed. The National Food Service Management Institute, Applied Research Division (NFSMI, ARD) conducted a
research study (2014-2015) to identify milk preferences of elementary and middle/junior high school students and determine how their preferences impact milk selection in schools. Students and
school nutrition professionals from approximately 30 different school districts throughout the country have been studied. Research results will be shared and how this data can assist
practitioners and school nutrition professionals to improve milk consumption.

Identify factors in the school cafeteria environment that enhance or hamper milk consumption
propose dairy products options and related services that will satisfy their customers.
